Custard Based Vanilla Ice Cream 蛋奶冰淇淋





Below slides show demonstrates the process making of custard based vanilla ice cream:-


Ingredients
egg yolks 4 pieces
honey 100g
semi skimmed milk 300ml
double cream 300ml
vanilla essence 2.5ml

Tools:-
ice cream maker
electric mixer

Methods
  1. in a saucepan slowly bring the semi skimmed milk to boiling point
  2. place the egg yolks and honey in a bowl and beat together
  3. then pour (1) onto the egg mixture beating together
  4. return the mixture to the pan and stir constantly until the mixture thickens and forms a film over the back of the spoon, do not let it boil or the mixture will separate
  5. remove from heat and leave until cold
  6. prepare double cream 300ml
  7. add 2.5ml vanilla essence
  8. stir (5) in the double cream and vanilla essence
  9. pour the mixture into the freezer bowl with the paddle running
  10. allow to freeze until desired consistency is achieved

配料
蛋黄4
蜂蜜100
半脱脂牛奶300毫升
双奶油300毫升
香草精2.5毫升

工具: -
冰淇淋机
电动搅拌机


方法
  1. 在一个锅里慢慢把半脱脂牛奶煮沸
  2. 蛋黄和蜂蜜放在一个碗里一起搅拌
  3. 然后(1)倒入到混合鸡蛋一起搅拌
  4. 返混合锅再搅拌及煮,不要让它煮沸或混合桨将分离
  5. 离火,留到冷
  6. 双奶油300毫升
  7. 2.5毫升香草精
  8. 5)在双奶油与香草精一起搅拌
  9. 混合桨倒到碗里放到冰箱冷冻
