Ingredients
Huai San (Chinese Yam) “raw “- 200g
Eggs (preferably organic) – 4 pieces
Water - ratio to egg: 4:4
Mushroom (Oyster mushroom 100g , Shimeji mushroom 75g, canned mushroom 100g)
Soy Sauce - 1 tablespoon
Stock –fish (ikan bilis)/ chicken – 1 bowl (medium size)
Methods:-
- prepare 4 eggs on a plate
- grate huai san on it
- stir & mix
- steam for 15 minutes
- mince mushrooms (Oyster mushroom 100g , Shimeji mushroom 75g, canned mushroom 100g)
- fry minced mushrooms mix with rice bran cooking oil, add fish stock and light soy sauce
- spread the fried mushrooms on steamed huai san eggs
- ready for serving
- Water ratio for steaming egg is 1:1 (i.e. 1 egg full filled of water to steam 1 egg)
- Huai San is a good source of healthy food for improving appetite
Huai San can cause itchiness thus handle it with glove is advisable
