Custard Based Vanilla Ice Cream 蛋奶冰淇淋
Below slides show demonstrates the process making of custard based vanilla ice cream:-
Ingredients
egg yolks 4 pieces
honey 100g
semi skimmed milk 300ml
double cream 300ml
vanilla essence 2.5ml
Tools:-
ice cream maker
electric mixer
Methods
in a saucepan slowly bring the semi skimmed milk to boiling point
place the egg yolks and honey in a bowl and beat together
then pour (1) onto the egg mixture beating together
return the mixture to the pan and stir constantly until the mixture thickens and forms a film over the back of the spoon, do not let it boil or the mixture will separate
remove from heat and leave until cold
prepare double cream 300ml
add 2.5ml vanilla essence
stir (5) in the double cream and vanilla essence
pour the mixture into the freezer bowl with the paddle running
allow to freeze until desired consistency is achieved

离火,留到冷
